When I think of making pudding, I don't immediately think of the microwave. After all, pudding is supposed to be cold! However, this dark chocolate pudding is not only made in the microwave, it can be eaten warm or chilled! Enjoy it however you want, just don't forget to share!

  • 3 Tbs. cornstarch
  • 1/3 C. sugar
  • 2 C. milk
  • 1/3 C. dark unsweetened cocoa powder
  • 1 tsp. vanilla

In a medium microwave safe container, combine the cornstarch, sugar, and cocoa powder. Add the milk and vanilla and whisk to combine. Start by cooking it in the microwave for 2 minutes on high and then whisk. After that, cook in the microwave on high one minute at a time, whisking after each interval, until the pudding has thickened. Once its almost thick, only cook it for 15-30 second intervals. Serve warm or wait until cool.
