These awesome empanadas are great as an appetizer or for dinner. The pastry is not even hard to make as well.

  • Pastry:
  • 1 C. flour
  • 1/2 tsp. salt
  • 1 tsp. baking powder
  • 2 Tbs. butter
  • 1/3 C. milk
  • Filling:
  • 1 lb. lean ground beef
  • 1/8 tsp. fresh ground black pepper
  • 1/8 tsp. salt
  • 3 Tbs. hot salsa
  • 1 Tbs. butter
  • 1/4 C. onion, chopped
  • 1 1/2 Tbs. chili powder

Preheat deep oil fryer to 350 degrees F. Sauté the onion in butter on low heat until it is starting to brown. Add the ground beef and cook on low until browned. Now add the salsa, chili powder, salt and pepper. Simmer for about 10 minutes, until flavors blend well. Set aside.

Mix the flour, salt, baking powder, butter and milk. Knead, as for biscuits, until well mixed. Roll out dough thin. Cut the dough in large circles. Place a spoonful of the meat mixture on the pastry and fold it over. Pinch the edges together with a crimping motion, then, press the edges through the crimped area with a fork. Fry rapidly in deep oil until golden brown.
