  • 1 (8-inch) prebaked pie shell or crumb crust
  • 2 ½ tsp. lemon zest
  • ½ C. lemon juice
  • 3 egg yolks
  • ¼ C. sugar
  • Meringue
  • 3 egg whites
  • ¼ tsp cream of tartar
  • 1/3 C. sugar

Preheat oven to 325 degrees. In a medium bowl, combine milk, lemon juice, zest and sugar. Mix in egg yolks and poured into crust.

With a handheld mixer or counter top mixer, beat egg whites with cream of tartar until small white peaks begin to form. Gradually add in sugar and beat until mixture becomes stiff or hard. Using a spatula, spread over filling evenly all the way to the crust.

Bake in oven for 12 to 15 minutes or until the top is golden brown.
