  • For filling:
  • 1/2 C. raspberries
  • 1 C. rhubarb
  • 2 4 T. sugar
  • 1 T. cornstarch
  • 2 tsp. vanilla extract
  • For topping:
  • 2 T. sugar
  • 1/2 C. flour
  • 1/2 C. oats
  • 1/2 stick melted butter

Preheat your oven to 350 degrees. Spray your baking pan with a non-stick spray. In a large bowl mix the raspberries and rhubarb with the cornstarch. Make sure the raspberries and rhubarb are coated evenly. Add vanilla and sugar. Mix it well. Pour the mixture into your baking pan. For the crumble topping you need to mix the oats, butter, flour, and sugar. Layer the topping on the raspberries and rhubarb. Put the dish into the oven for 45 minutes or until golden brown. Let cool and serve with your choice of whip cream or ice cream.
