Amazing Roasted Salted Caramel Almonds

- 2 C. raw almonds
- 1 stick butter
- 1 C. brown sugar
- 1/4 C. light Karo syrup
- 1/2 tsp. vanilla
- 1/2 tsp. sea salt
- 1/4 tsp. baking soda
- pinch sea salt
Heat the oven to 350 degrees. Spread the almonds in a single layer on a baking sheet. Roast them for 15 minutes.
Meanwhile, in a large saucepan bring the butter, brown sugar, and Karo to a boil. Let boil for 5 minutes, stirring constantly. Stir in the vanilla, salt, and baking soda. Carefully pour the roasted almonds into the butter mixture and stir until well coated.
Reduce the oven to 250 degrees. Cover a baking sheet with foil and, using a slotted spoon, remove the almonds from the saucepan and place them in a single layer on the baking sheet. Don't touch with fingers because the almonds are very hot.
Place the almonds in the oven for 15 minutes, stir, and bake for an additional 15 minutes. Carefully remove the almonds from baking sheet with a spatula and put them on a piece of waxed paper to cool. Sprinkle with sea salt.
