  • Olive oil
  • 1 tsp. minced garlic
  • 2 small zucchini, thinly sliced
  • 1 C. fresh spinach, roughly chopped
  • 3 eggs
  • 3 egg whites
  • 3/4 C. milk
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1/2 C. shredded cheddar

Preheat oven to 350 degrees. Spray a 9-inch pie plate with non-stick cooking spray. In a large skillet, heat olive oil and minced garlic over medium heat. Add in zucchini. Season with salt and pepper. Stir frequently and cook for 5-6 minutes.

In the meantime, add eggs, egg whites, milk, salt and pepper and whisk. Place cooked zucchini at the bottom on the pie plate. Add a fourth of the cheese on top of the zucchini. Pour egg mixture on top. Sprinkle spinach and cheese on top.

Bake for 45-50 minutes until completely cooked. Allow to cool for at least 10 minutes before serving. Enjoy!
