American Chop Suey

This has been a New England favorite for years. Quick and easy. Have dinner on the table in less than 30 minutes.

Ingredients

  • 1 lb. elbow macaroni
  • 1 lg. can whole American tomatoes, crushed with hands
  • 1 lb. ground beef
  • 1 onion, diced
  • 1 green pepper, diced
  • salt and pepper to taste

Directions

Cook macaroni until al dente in salted water. Saute`ground beef with onion and green pepper. Drain excess fat from pan. Add crushed tomatoes to cooked macaroni along with meat combination. Salt and pepper to taste. Stir well. Serve.

  • I have made this same dish, minus the green pepper, for years. My new mother in law taught me to make it. We lived in Vermont and it was called goulash. I still make it every once in awhile when I feel like some good comfort food. I will try it with the green pepper next time. Sounds like a good addition.

  • Is that what it is called? lol My dad was not a cook per se, but he taught or told me to fix this when I was a little girl. He also would have me make hot dogs and tomatoes with rice instead sometimes.
