A yellow mustard macaroni salad recipe full of fresh veggies.

  • 2 C. uncooked elbow macaroni
  • 3 hard-cooked eggs, chopped
  • 1 small onion, chopped
  • 3 stalks celery, chopped
  • 1 small red bell pepper, seeded and chopped
  • 2 Tbs. dill pickle relish
  • 2 C. creamy salad dressing (e.g. Miracle Whip)
  • 3 Tbs. prepared yellow mustard
  • 2 1/4 tsp. white vinegar
  • 1/4 tsp. salt
  • 3/4 tsp. celery seed

Bring a pot of lightly salted water to a boil. Add macaroni, and cook for 8 to 10 minutes, until tender. Drain, and set aside to cool. In a large bowl, stir together the eggs, onion, celery, red pepper, and relish. In a small bowl, stir together the salad dressing, mustard, white sugar, and vinegar, salt and celery seed. Pour over the vegetables, and stir in macaroni until well blended. Cover and chill for at least one hour before serving.

Yield: 6 Servings.

  • This salad sounds really good, but the white sugar isn't listed, only white vinegar. The instructions say to add white sugar and vinegar. I would like to make this. If you happen to read my comment. please let us know how much sugar. Thank you
    To Honeybear-I believe that Miracle Whip must be like what the Amish make. I have a Beverly Lewis Amish Cookbook which lists "Miracle Whip" as an ingredient in several recipes.
