  • 6 whole potatoes, skins on and diced
  • 4 stalks celery, diced
  • 3 whole carrots, peeled and diced
  • 3 eggs, hard boiled and diced
  • 1/2 C. mustard
  • 1/2 C. mayo
  • 1/4 C. sugar
  • 1/4 C. apple cider vinegar
  • lemon juice from 1 lemon
  • Salt and pepper, to taste

Place the cut potatoes in a large pot and cover them completely with water
Bring them to a boil for twenty minutes
Continue boiling until they are tender and can be easily poked with a fork
Drain them and place in a large mixing bowl
Add in the onion, celery, carrots, and eggs, mix well
Blend mustard, mayo, sugar, vinegar, and lemon juice in a smaller bowl
Add this mixture to the large bowl and stir everything together
Add salt and pepper to taste
