Ingredients

  • 2 large cooked chicken breasts, diced
  • 1 cup mild salsa
  • 1 cup canned black beans, drained
  • 2 green onions, chopped
  • 1 cup shredded cheddar/jack cheese
  • 1 cup crushed tortilla chips
  • 1 tomato, diced
  • ⅔ cup sour cream
  • ⅓ cup cream cheese
  • ½ cup canned green chiles, drained
  • ½ cup canned corn, drained
  • Optional: One can of green beans for a side.

Directions

Preheat your oven to 350 F and prepare a glass baking dish.
Place cooked chicken in a medium-sized pan. Slowly stir in your salsa and cream cheese. Heat this mixture through until cream cheese is melted.
Add black beans and green chiles and heat through.
Once your chicken mixture is cooked, it’s time to layer. Place layers of casserole into the dish in the following order. First, lay down your crunched tortilla chips, next your Chicken mixture. After this, layer your tomatoes, your corn and beans, and your green onions. Then, top with sour cream, and sprinkle with a final layer of cheese.
Bake your casserole for 25 minutes or until hot and bubbly. As you bake, boil your optional side of canned green beans so that they are ready at about the same time.
