Ingredients

  • 4 eggs
  • 2 Tbs. grated parmesan cheese
  • 1/4 tsp. pepper
  • 1/4 C. butter
  • 2 tsp. anchovy butter

Directions

Beat eggs lightly with fork and add cheese and pepper. Fry egg mixture in butter in four parts, making 4 small omelets. Spread each omelet with 1/4 of the butter and fold. Serve immediately.
