  • 1 lb. peeled, sliced and boiled potatoes
  • 1 lb. mushrooms, sliced
  • 2 T. butter
  • ½ C. chicken stock
  • 1/3 C. white wine
  • 1 T. olive oil
  • ½ C. grated parmesan cheese
  • 1 C. shredded mozzarella cheese
  • 1 can of cream of mushroom soup
  • 3 garlic cloves, minced
  • 2 shallots, chopped
  • ½ tsp. sage leaves, chopped
  • ½ tsp. thyme leaves, chopped
  • Salt
  • Pepper

Preheat the oven to 375 degrees. Grease a baking dish and set it aside. In a skillet, sauté the mushrooms and shallots until tender in the butter and olive oil. Add in the thyme, sage, garlic, salt and pepper. Add in the white wine and let it simmer. In the greased baking dish, layer the prepared potatoes. Add in the mushroom mixture. In a large bowl, mix the chicken stock and can of cream of mushroom sauce. Pour it over the mushroom sauce. Sprinkle the mozzarella and parmesan cheese. Bake for 20 minutes. Serve and enjoy.
