  • 8 chicken thighs
  • 1 T. olive oil
  • 14 oz. pomi tomatoes, chopped
  • 14 oz. pomi tomatoes, strained
  • 1/2 tsp. oregano
  • 1/2 tsp. rosemary
  • 1/2 tsp. basil
  • 1/2 tsp. thyme
  • 1 C. red wine
  • 2 T. sugar
  • 1 green pepper, sliced
  • 4 cloves garlic, minced
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper

Heat the olive oil on a skillet. Let the chicken thighs cook for 8 minutes on each side. They should be browned. To get the crockpot started add the strained tomatoes, sliced green pepper, seasonings, red wine, garlic, and sugar. Place the cooked chicken thighs into the crockpot. Top off the chicken thighs with the chopped tomatoes, salt and pepper. Set the crockpot to high and let it cook for 3 hours. After 3 hours, set the crockpot to low and let it cook for another 6 hours. Serve over pasta or rice.
