  • 1 can 6-oz. pink salmon, skinless and boneless
  • 1/4 C. dill pickle, finely chopped
  • 1 Tbs. onion, finely chopped
  • 1/3 C. mayonnaise
  • 1/2 C. mild cheddar cheese, shredded
  • 1 Tbs. lemon juice
  • 1/2 tsp. dried dill weed
  • 1 box pie crusts
  • 1 3-oz. pkg. cream cheese, softened
  • 2 lemon wedges

Preheat your oven to 400 degrees F. Ina large bowl, mix salmon, pickle, onion, mayonnaise, cheese, lemon juice and dill weed. Refrigerate. Next, unroll the pie crush and cut with 3-inch round cookie cutters. Press dough into muffin pan. Spoon 1 tsp. cream cheese on the bottom of each cup and top with salmon mixture. Bake for 15 to 20 minutes or until crust is golden brown. Serve warm.
