  • 1 (10-oz.) pkg. saffron yellow rice
  • 1 (8-oz.) container sour cream
  • 1 (8-oz.) cream cheese, at room temperature
  • 1 (10.5-oz.) can cream of mushroom soup
  • 1×(11-oz.) can celery, chopped
  • 4 carrots, chopped
  • 2 1/2 C. cheddar cheese, shredded

Preheat oven to 400 degrees F. Cook rice according to package directions. When rice is ready, pour into a large cooking bowl. While rice is hot, mix in the sour cream and cream cheese. Mix until cream cheese is smooth. Mix together celery, corn and cream of mushroom soup. Mix into rice, add salt to taste, then mix once more to make sure everything is well incorporated. Pour mixture into a 9-by-13-inch dish. Bake for 25 or 30 minutes or until cheese starts to bubble.
