Apple Almond Dumplings

A school teacher in Portland, Tennessee passed this one along to me as one of her family favorites. Everyone loves my rendition of the recipe and begs me to make it when they are home.

  • 1 can cresent type rolls (8 count)
  • 2 Granny Smith apples
  • 1 C. apple, white grape, or orange juice
  • 1/2 stick butter
  • 1/2 C. granulated sugar
  • 1 tsp. cinnamon
  • 1 Tbs. lemon juice
  • 1/4 C. slivered almonds
  • 1 tsp. vanilla or almond extract

Wash, peel, and core apples. Slice into four quarters. Drop into a vinegar or lemon juice and water bath to keep apples from turning dark. Dry apples and wrap each quarter in a piece of the cresent roll and place seam side down in baking dish.

Bring to a boil the juice, butter, lemon juice, and sugar just until sugar and butter are dissolved. Sprinkle cinnamon heavily over the tops and pour the hot liquid over each dumpling. Scatter slivered almonds over the top of each. Place in 350 degree oven and bake 35 minutes. Spoon hot liquid over each dumpling and serve with whipped topping, cream, or vanilla ice cream. This is a sure hit on a cool fall or winter day! Also a beautiful delicious dish for the holidays.
