Apple and Cranberry Crisp

The perfect fall dessert with a big scoop of ice cream on top. This recipe calls for it to be made in ramekins for a fancier take on a traditional crisp.

Ingredients

  • Filling:
  • 12 apples
  • 1/4 C. sugar
  • 3 Tbs. flour
  • 1/4 C. dried cranberries
  • Juice of one lemon
  • Topping:
  • 1/4 C. butter (1/2 stick)
  • 1/2 C. sugar
  • 1/2 C. oats
  • 1/4 C. flour
  • 1/2 C. slivered almonds

Directions

Preheat oven to 375 degrees. To make filling, peel and core apples. Cut into bite-size chunks. Combine with all other filling ingredients. Spoon into generously buttered ramekins.

To make topping, combine all ingredients. Using fingers, crumble butter until mixture resembles peas. Spoon generous 2 Tbs. on top of each apple-filled ramekin. Place ramekins on baking sheet. bake for 35-45 minutes, until browned on top.

Yield: 10 generous servings
