Apple and Fig Oatmeal Bread

Ingredients

  • 2/3 C. butter
  • 1 3/4 C. all-purpose flour
  • 1/3 C. brown sugar
  • 1 tsp. ginger
  • 1 tsp. mixed mace and coriander
  • 2/3 C. oatmeal
  • 1 egg, beaten
  • 1/3 C. honey or molasses
  • 3/4 C. peeled and diced apple
  • 3/4 C. dried figs, diced
  • 1/2 tsp. baking soda
  • 1 1/4 C. milk

Directions

Preheat the oven to 350 degrees. Take 4 Tbs. of the butter and grease an 8-inch square pan, 2 inches deep. Line with wax paper. Cut the rest of the butter into the flour, and add the sugar, spices, oatmeal and beaten egg. Warm the honey or molasses and stir in. Add the diced apple and figs. Dissolve the baking soda in the cold milk and stir into the oatmeal mixture. Put into the pan and level the top with a fork. Bake for 1 hour. Cool and slice.
