Apple and Rice Pudding
- 2 C. cooked brown rice
- 1/4 C. raisins
- 2 1/2 Tbs. honey
- 1 Tbs. lemon juice
- 1/4 Tbs. lemon rind
- 4 Tbs. low-fat cottage cheese
- 1 14 oz. can apple pie filling (2/3 can)
In a mixing bowl combine rice, apple, lemon juice, rind, raisins, honey and cottage cheese.
Spoon into two serving dishes and chill well before serving.
