Ingredients

  • 2 lb. pork filets or chops
  • 1 C. chopped apple
  • 1 C. chopped dried apricot
  • 1/2 C. fresh or dried cranberries (optional)
  • 1/2 C. chopped onion
  • 2 ribs celery, sliced in 1/2" pieces
  • 3/4 C. apple juice
  • 1/2 C. brown sugar
  • 1 1/2 Tbs. cornstarch
  • 2 Tbs. cold water

Directions

Combine all ingredients, except for cornstarch and water, in crockpot. Cover; cook on low for 7-9 hours. 30 minutes before serving, combine cornstarch and water; add to crockpot. Cover; cook 30 minutes more until sauce is thickened.
