Apple Brie Soup

Ingredients
- 1 qt. heavy whipping cream
- 2 C. apple cider
- 1 tsp. ground cinnamon
- 1 tsp. ground nutmeg
- 1 C. white wine
- 1/2 C. brandy
- 1/2 C. sugar
- one 8-oz. wheel Brie cheese
- 1/4 C. roux
Directions
In a heavy saucepan, heat cream and cider to just below a boil. Add sugar, nutmeg, and cinnamon. Simmer 5 minutes. Add wine and brandy, simmering 10 minutes longer. Meanwhile, puree Brie in a food processor until creamy. Whip cheese into warm cream and wine mixture. Do not boil. Whip in roux with a wire whisk and cook at a very low simmer for another 5 minutes.
