Apple Butter

This apple butter is so creamy and spicy and always reminds me of Fall!  I never buy apple butter because this is so easy to make.  Sometimes I make more and can it but this make 2 pints and can be just stored in the refrigerator.

Ingredients

  • 3 lb. apples (i.e. Fuji or Granny Smiths - a crisp, juicy sour apple is best)
  • 1 C. cider or apple juice
  • 3 C. sugar
  • 2 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1/2 tsp allspice
  • 1/2 tsp. cloves
  • 1 dash salt

Directions

Peel and core apples. Cut into eighths. Blend 1/3 cup cider or apple juice. Blenderize 4-5 pieces of apples at a time. Blend 30 seconds on high speed. After 5 seconds remove cover and add about 1/3 of the apples.. Empty into a sauce pan. Repeat process with the remaining apples. Add sugar and spices to mixture in sauce pan. Cook over low heat (not too high or sugar will burn) for 45 minutes, stirring occasionally and cooking slowly until thick. Pour into jars and seal to keep or simply keep in the refrigerator in jars to enjoy.
