Apple Butter Banana Bread
- 1 1/2 C. all purpose flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. ground cinnamon
- 1/4 tsp. baking soda
- 1/4 tsp. salt
- 1/8 tsp. ground nutmeg
- 2 slightly beaten eggs
- 3/4 C. sugar (can be reduced to 1/2 C. for diet restrictions)
- 2 medium overripe bananas, mashed
- 1/2 C. spiced apple butter
- 1/4 C. canola oil
- 1/2 C. chopped nuts (optional)
Grease and flour bottom and sides of one 9x5x3 inch loaf pan; set aside. In a large bowl combine flour, baking powder, cinnamon, baking soda, salt, and nutmeg. Make a well in center of mixture; set aside.
In medium bowl combine eggs, sugar, banana, apple butter, and oil. Add egg mixture all at once to flour mixture. Stir just until moistened (batter should be lumpy). Fold in chopped nuts if desired. Spoon batter into prepared pan.
Bake at 350 degrees about 45 minutes or until toothpick in center comes out clean. Cool in pan on a wire rack for 10 minutes. Remove from pan, cool completely on wire rack. Wrap or cover tightly and store OVERNIGHT before slicing.
