Apple Butter Banana Bread

This is the most uniquely flavorful banana bread I've ever tasted, and the aroma while baking is heavenly! I omit the chopped nuts due to our daughter's peanut allergy, and with all the spice we don't even notice they're missing. Best if made a day ahead for an even moister bread.

Directions

Grease and flour bottom and sides of one 9x5x3 inch loaf pan; set aside. In a large bowl combine flour, baking powder, cinnamon, baking soda, salt, and nutmeg. Make a well in center of mixture; set aside.

In medium bowl combine eggs, sugar, banana, apple butter, and oil. Add egg mixture all at once to flour mixture. Stir just until moistened (batter should be lumpy). Fold in chopped nuts if desired. Spoon batter into prepared pan.

Bake at 350 degrees about 45 minutes or until toothpick in center comes out clean. Cool in pan on a wire rack for 10 minutes. Remove from pan, cool completely on wire rack. Wrap or cover tightly and store OVERNIGHT before slicing.
