Apple Cake

My apple cake recipe has been handed down for over three generations, along with a few changes. The cake is easy to make, one bowl. The cake tends to get more moist every day, if it lasts that long.

1 cake


  • 1 C. all vegetable oil
  • 3 eggs
  • 1-3/4 C. sugar
  • 1 Tbs. pure vanilla extract
  • 2 C. all-purpose flour
  • 3/4 tsp. baking soda
  • 2 tsp. cinnamon
  • 1 C. whole/broken walnuts
  • 6 to 8 apples, depending on size, peeled and sliced (I usually use Granny Smith)

Preheat oven to 350 F. In large bowl, with a wooden spoon, blend together oil, eggs, sugar, and vanilla till mixed well. In measuring cup, stir together flour, soda, and cinnamon. Add flour mixture to bowl and stir until combined. Add walnuts and sliced apples. At this point, you will think that there is not enough batter, but when baked, everything will be fine.Lightly spray 13" X 9" X 2" pan with Pam type spray and lightly dust with flour. Spread mixture in pan. Bake at 350 F. for about 35-45 minutes, or until toothpick inserted in batter comes out clean. Cool well in pan. Dust with powered sugar before serving.
