Apple Cake
Ingredients
- Cake:
- 1 1/4 C. vegetable oil
- 2 C. sugar
- 3 eggs
- 3 C. self-rising flour
- 1 tsp. cinnamon
- 1 tsp. vanilla extract
- 2 C. peeled, chopped granny smith apples
- 1 C. chopped walnuts
- Glaze:
- 1 Tbs. butter at room temperature
- 1 1/2 C. confectioners' sugar
- 2-3 Tbs. apple juice
Directions
Preheat oven to 325 degrees. In a bowl combine the oil, sugar and eggs. Beat well. Add flour and cinnamon to the creamed mixture. Then, fold in apples, vanilla, and walnuts. The mixture will be thick. Pour into a well greased and floured Bundt pan. Bake for 1 hour and 15 minutes, or until done.While the cake cools make the glaze. Blend the butter and confectioners' sugar together, then add enough apple juice to make a smooth and runny glaze. When cake is completely cooled pour glaze over top of cake letting it run down the sides.
