Apple & Cherry Cornish Hens

Ingredients
- 4 Cornish game hens
- 3 med. red apples
- 4 C. frozen red tart cherries in juice
- 1/2 C. sugar
- 2 Tbs. cornstarch
Directions
Rinse hens and trim out excess fat from cavity. Dice apples and mix with 2 cups of drained cherries (reserving liquid). Stuff hens with fruit mixture. Bake covered for 1 hour at 350 degrees and bake uncovered for an additional 45 minutes (or until browned) at 375 degrees. Drain remaining cherries and add sugar and cornstarch to liquid. Cook until thickened. Add cherries and spoon over hens when serving. Serve remaining sauce on the side.
