Apple Cider Corned Beef and Cabbage

  • 1 medium large packaged corn beef with seasonings
  • 1 jug apple cider
  • 1 head cabbage, cored and quartered
  • 4 carrots, peeled and halved
  • 4 new potatoes

Place corned beef and seasonings in a crock pot, cover with apple cider, and cook on low for 6-8 hours. When done, ladle juice from crock pot into a Dutch oven half full and add about 2-3 cups more water and bring to a boil. Add vegetables and cook until tender. Slice corned beef and transfer along with vegetables to a serving platter.

  • No need to cooked the brisket first. Just put cut up Idaho potatoes on the bottom , add veggies, I add onion wedges and put roast on top with cider added and cook it all together for about 6 hrs. on low. My Irish husband and his family LOVE it.
