  • Pancakes
  • 2 C. all-purpose flour
  • 2 T. sugar
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • ¼ tsp. salt
  • 10.5 oz. (approx. 2 containers) Greek blended vanilla yogurt
  • 1 C. apple cider
  • 2 eggs, separated
  • Apple syrup
  • 2-3 apples, chopped into large chunks without skin
  • ½ C. packed brown sugar
  • 2 T. unsalted butter
  • 1 tsp. cinnamon

In a large bowl, combine flour, sugar, baking powder, baking soda, and salt until blended. In another bowl, mix together yogurt, apple cider, and egg yolks. Add two mixtures together until smooth and well blended. Take the egg whites in a separate bowl and beat until stiff peaks form. Pour ¼ off egg whites into the batter and stir until batter is lighter. Once completed add the rest of the egg whites and blend well. Heat a griddle or pancake pan over medium heat and spray with nonstick cooking spray or melt butter onto griddle. For small pancakes, pour ¼ C. of batter onto griddle. Cook until browned then flip and cook other side.
To make syrup, melt butter in a large skillet and add apple chunks stirring often and keeping apples soft. Add brown sugar and cinnamon when desired texture for apples is reached and cook until sugar melts into syrup. Remove from heat and top cooked pancakes to serve.
