Not all potatoes need to be mashed, some just need the right dressing. Instead of sticking with oil and salt, try something new and create an apple cider reduction for those sweet potatoes. In 30 minutes you’ll have potatoes unlike any you’ve had before.

  • 1 ½ lb. sweet potatoes, peeled and sliced
  • 1 large onion, chopped
  • 2 T. olive oil
  • ¾ C. apple cider
  • Salt and pepper to taste

Preheat oven to 400 degrees. Toss sweet potatoes and onions with oil in a bowl, fully coating the potatoes as much as possible. Pour onto a baking sheet or into a baking dish and season with salt and pepper. Bake for 25 minutes, stirring mixture half way through. While potatoes are in the oven, heat apple cider on high heat until boiling. Boil until cider is reduced to 3 tablespoons, approximately 12 minutes. Once cider is finished, pour gently over sweet potatoes and mix until completely coated and bake for 5 more minutes. Serve warm and enjoy!
