Ingredients

  • 2 pkgs. oatmeal cookie mix
  • 2 sticks butter or Oleo
  • 4 tsp. pumpkin pie spice
  • 2 Tbs. sugar
  • 10 tart apples, peeled, cored and sliced thin
  • 8 oz. Cool Whip

Preheat oven to 350 degrees. In a 13x9-inch cake pan, place butter/oleo.  Place pan in oven until butter starts to melt, remove from oven. Place softened butter sticks in bowl with cookie mix and 2 tsp. pumpkin pie spice. Mix with fork until crumbly. Place half of crumbly cookie mixture evenly in cake pan. Place sliced apples over cookie mixture evenly. Sprinkle sugar and remaining 2 tsp. pumpkin pie spice evenly over apples. Place remaining half of crumbly cookie mixture evenly over apples. Bake for 45 minutes or until apples feel soft (try poking with a knife). Serve warm or cooled with Cool Whip.
