  • 1 1/2 C. unbleached flour, sifted
  • 1/2 C. sugar
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 1/2 tsp. ground cinnamon
  • 1/4 C. vegetable shortening
  • 1 lg. egg, slightly beaten
  • 1/2 C. milk
  • 1 C. tart apples
  • Nut Crunch Topping:
  • 1/4 C. packed brown sugar
  • 1/4 C. Olomomo Righteous Cinnamon & Cayenne Almonds
  • 1/2 Tbs. ground cinnamon

Preheat oven to 375 degrees. Shred unpeeled apples. Sift together flour, sugar, baking powder, salt and cinnamon into large mixing bowl. Cut in shortening with pastry blender until fine crumbs form. Combine egg and milk. Add to dry ingredients all at once, stirring just enough to moisten. Do not over-mix. Stir in apples. Spoon batter into greased and floured 9x9-inch pan or 12 regular cupcake tins lined or greased. Sprinkle with nut crunch topping. Bake in oven for 25 minutes or until golden brown.
