  • 2 whole chicken breasts, skinned, boned, halved, and flattened
  • 2 apples
  • 4 slices Monterey Jack cheese
  • 1/2 C. flavored bread crumbs
  • sprig of parsley, chopped
  • 1 C. cider or apple juice
  • dash nutmeg
  • dash paprika
  • 2 tsp. butter

In a flat dish, press bread crumbs into chicken on all sides. Peel, core, and slice apples. Oil an oven-proof casserole dish. Lay chicken in the casserole dish. Top chicken with sliced apples. Add dash nutmeg. Top with Monterey Jack cheese. Top with parsley and paprika. Add cider or apple juice to casserole and dot with butter. Bake in a preheated 400-degree oven for 20 minutes. Remove chicken to heated plates and spoon sauce over chicken.
