Easier and quicker to make than apple pie. Have made it many, many times and company just loves it. I usually make a double batch. Top with whip cream or ice cream.

Ingredients

  • 4 C. sliced apples
  • 1 C. sugar, divided
  • 1 egg
  • 1/2 tsp. cinnamon
  • 1 Tbs. butter
  • 1/2 C. unbleached flour
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt

Directions

Peel, core and slice enough apples to make 4 C. of sliced apples. Place apple slices into a well-greased 9-inch pie or square pan.

Sprinkle 1/2 C. sugar and cinnamon over apples. Beat together butter, egg and remaining 1/2 C. sugar. In a separate bowl, sift together flour, baking powder adn salt. Add to well-beaten egg-sugar mixture. Spoon the batter over the apples and bake in a 375 degree oven for about 30 minutes or until crust is golden brown and apples are tender, juicy and bubbly.
