Apple-Molasses Crumb Cake

Ingredients
- 2-1/4 C. flour
- 1 tsp. salt
- 2 tsp. cinnamon
- 3/4 C. brown sugar
- 3/4 C. sugar
- 3/4 C. vegetable oil
- 1 egg, at room temperature
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1/2 C. molasses
- 3/4 C. buttermilk, at room temperature
- 1-1/2 C. chopped tart apple
- 1/3 C. quick-cooking oats
- 1/2 C. chopped walnuts
Directions
Preheat oven to 350 degrees F. Grease a 13-inch by 9-inch baking pan. In a large mixing bowl, combine flour, salt, 1 tsp. cinnamon, brown sugar, and granulated sugar; mix well. Remove 1/4 C. of mixture; set aside for topping.
To the remainder, add 1/2 tsp. cinnamon, oil, egg, baking soda, baking powder, molasses, buttermilk, and apple. Mix well. Pour into baking dish. To the reserved 1/4 C. topping, add 1/2 tsp. cinnamon, oatmeal, and nuts. Stir to combine; sprinkle evenly over batter. Bake 30 minutes, until a tester inserted in the center comes out clean.
