Ingredients

  • 8 egg whites
  • 8 oz. fat free yogurt (banana or lemon)
  • 1 1/2 C. no sugar applesauce
  • 1 1/2 C. skim milk
  • 1 C. old fashioned oats
  • 2 C. oat bran
  • 3 large apples, peeled and cubed
  • 3 1/4 C. oat or wheat flour
  • 1 C. Splenda
  • 2 tsp cinnamon
  • 2 tsp baking soda
  • 3 tsp baking powder

Directions

Mix dry ingredients and add to wet. Using baking cups (or spray muffin tin), fill 3/4 full. Bake at 400 degrees for 17 minutes. Cool, bag and put in refrigerator.

Makes approx. 34 muffins.
