Apple Oat Bran Muffins
Ingredients
- 8 egg whites
- 8 oz. fat free yogurt (banana or lemon)
- 1 1/2 C. no sugar applesauce
- 1 1/2 C. skim milk
- 1 C. old fashioned oats
- 2 C. oat bran
- 3 large apples, peeled and cubed
- 3 1/4 C. oat or wheat flour
- 1 C. Splenda
- 2 tsp cinnamon
- 2 tsp baking soda
- 3 tsp baking powder
Directions
Mix dry ingredients and add to wet. Using baking cups (or spray muffin tin), fill 3/4 full. Bake at 400 degrees for 17 minutes. Cool, bag and put in refrigerator.
Makes approx. 34 muffins.
