  • 5 tart cooking apples, peeled and sliced
  • 3/4 C. pecans, chopped
  • 6 T. packed brown sugar
  • 1 tsp. ground cinnamon
  • 1/4 C. margarine
  • 6 medium eggs
  • 1 1/2 C. orange juice
  • 1 C. flour
  • 1 tsp. salt
  • 4 T. sugar
  • 1 T. brown sugar
  • extra cinnamon
  • maple syrup

Preheat your oven to 400°F and grease the inside of a 9x13 baking dish. In a large skillet, sauté the apples, pecans, packed brown sugar, cinnamon, and margarine. Stir frequently until the apples begin to soften. Put apple mixture in your prepared baking dish. In a large bowl, mix eggs, orange juice, salt, and flour until smooth. Pour egg mixture on top of apples and sprinkle with remaining sugars and cinnamon. Bake for 20 minutes. Slice and serve with maple syrup.
