Apple-Pecan Chip Pie

I love baking pies, and I experimented with a pecan pie base, and thought, "why not add apples?" since they go well with nuts. I especially like to use Granny Smith apples because of their tartness, although you could substitute any variety of apple to this pie, it has a sweet-tart flavor! My family and friends love it!

Ingredients

  • Crust:
  • 1 1/4 C. flour
  • 3 oz. cream cheese
  • 1/2 C. butter
  • Filling:
  • 1 1/2 C. Granny Smith apples, peeled, cored, and chopped finely
  • 1/2 C. chopped pecans
  • 1/2 C. semi-sweet chocolate chips
  • 2 large slightly beaten eggs
  • 3/4 C. light corn syrup
  • 1/3 C. sugar
  • 1 tsp. vanilla
  • Vanilla Glaze:
  • 1/2 C. confectioners' sugar
  • 1 tsp. vanilla
  • 1 tsp. milk

Directions

To prepare the crust. in a medium bowl, cut in cream cheese and butter with flour and toss with fork until crust holds together. Roll out to fit a 9 inch pie pan. Prick bottom with fork several times, flute edges.Meanwhile in a medium bowl, combine apples, pecans, chocolate chips and cinnamon, mixing well. Spread mixture onto bottom of prepared, unbaked pie crust. Set aside.In a small bowl, mix eggs, corn syrup, sugar, and vanilla, blending well. Pour mixture overtop apple mixture. bake at 375 degrees for 40 minutes or until crust is golden and filling is set. Cool. Drizzle top of pie with vanilla glaze.To make glaze, mix confectioners' sugar, vanilla, and milk together.
