These autumn pancakes are a welcome switch from toast and cereal. Chunks of pecans and apples fill the cinnamon-flavored batter topped with a homemade spiced syrup.

  • 1 C. all-purpose flour
  • 2 Tbs. brown sugar
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. ground cinnamon
  • 3/4 C. milk
  • 2 Tbs. milk
  • 2 eggs (separated, whites stiffly beaten)
  • 1 tsp. vanilla extract
  • 1/2 C. apple (peeled and finely chopped)
  • 1/2 C. finely chopped pecans
  • 1/4 C. packed brown sugar
  • 2 Tbs. cornstarch
  • 1/4 tsp. ground allspice
  • 1/4 tsp. ground cinnamon
  • 1/4 tsp. ground nutmeg
  • 2 C. apple cider

Combine the flour, brown sugar, baking powder, salt, and cinnamon in a mixing bowl. Stir in the milk, egg yolks, and vanilla. Fold in the apple, pecans, and beaten egg whites. Using a 1/4 C. measure, drop onto a hot, lightly greased griddle or skillet. Turn when bubbles form on the surface and the edges are golden brown. Serve with apple spice syrup.

To make syrup, combine the brown sugar, cornstarch, and spices in a saucepan and mix well. Add the cider and stir over moderate heat until the syrup boils and is slightly thickened. Cool slightly before serving. Makes 2 cups.

Yield: 12 pancakes
