  • 1 pound butter
  • 1 cup white sugar
  • ½ cup brown sugar
  • 4 cups flour
  • 2 teaspoon ground cinnamon
  • 1 ½ teaspoons salt
  • 2 teaspoons vanilla
  • 3 pounds peeled, quartered, cored, and sliced apples
  • 2 tablespoons lemon juice
  • 4 tablespoons butter

Preheat the oven to 375 degrees. Combine the 1 pound of butter, ¾ cup white sugar, brown sugar and vanilla in a bowl fitted with a paddle attachment. Beat the mixture for 2 minutes on medium speed. In a separate bowl, sift the flour and salt together. Combine the two bowls and mix on low speed. Press 2/3 of the dough onto the sheet pan and refrigerate for 20 minutes. Then bake for 20 minutes. Use low speed to combine 1 teaspoon cinnamon with the remaining third of the dough and set it aside. When the crust is done, lower the oven to 350 degrees.

In a large bowl, combine the lemon juice with the apples. Add the rest of the sugar and cinnamon and mix. Put a pot over medium-low heat and melt the remaining butter in the pot. Add the apples and simmer for 15 minutes, stirring frequently. Leave a ½ inch border on and spread the apples over the crust. Pinch pieces of the reserved dough and then drop them over the apples evenly across the top. Bake for 30 minutes.
