Apple Relish
Ingredients
- 3 large apples
- 4 C. finely chopped onion
- 2 each green and red bell peppers, seeded and finely chopped
- 1 C. each raisins and cider vinegar
- 3/4 C. firmly packed brown sugar
- 1 Tbs. mustard seed
- 1 tsp. each salt and turmeric
- 1 1/2 tsp. celery seed
Directions
Peel tomatoes and coarsely chop; you should have 6 C. Peel apples and coarsely chop; you should have 4 C. Place tomatoes and apples in a 4 to 5 quart pot along with onion, peppers, raisins, vinegar, sugar, mustard seed, salt, turmeric, and celery seed. Bring to a boil over high heat, stir occasionally. Reduce heat to medium low and continue to cook, uncovered and stirring occasionally to prevent sticking, until mixture is quite thick and liquid has been absorbed, about 1 hour. Meanwhile, prepare 4 pint size canning jars, using the water bath method with a Canning Kettle. Then proceed with steps 3 through 10. Process for 10 minutes.
Yield: 4 pints
