  • 3 lb. pork belly
  • 2 T. fresh thyme, chopped
  • 2 tsp. sea salt
  • 1 tsp. freshly ground black pepper
  • 3 medium apples, peeled, cored, and cut into thick slices
  • 2 medium onions, sliced
  • handful of fresh sage leaves
  • 2 medium sweet potatoes, peeled and diced
  • 1/2 C. half-and-half
  • 3 T. butter
  • 2 T. light-brown sugar

Preheat your oven to 400°F. Rub the entire roast with thyme, sea salt, and pepper. Transfer to a large pan and roast for 30 minutes. Reduce oven temp to 350°F and roast for another hour. In a large bowl, toss together the apples, onions, sage, and black pepper. Transfer to the middle of a smaller roasting pan. Remove pork from the oven and place on top of the apples and onions. Return to the oven for another hour. Meanwhile, place sweet potatoes in a large saucepan filled with boiling water. Let cook for 20 minutes. In a small saucepan, mix together half-and-half, butter, and brown sugar. Bring to a simmer, stirring frequently. Remove from heat, drain potatoes, and combine with cream mixture. Gently mash and season with salt and pepper. Serve immediately with roast.
