These classic muffins are delicious with any kind of apple. Whip up the streusel topping and a little bit of glaze to make them just a tad more perfect than they already are. Enjoy for breakfast, with tea or coffee!

  • Ingredients:
  • 2 C. flour
  • 1 C. sugar
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • pinch of salt
  • ½ C. melted butter
  • 1 tsp. vanilla
  • 2 eggs
  • 1 C. diced and peeled apples
  • Streusel:
  • ⅓ C. packed brown sugar
  • 1 Tbs. flour
  • ⅛ tsp. cinnamon
  • 4 Tbs. cold butter (cubed)
  • Glaze:
  • 1½ C. powdered sugar
  • 1-2 Tbs. milk
  • 1 tsp. butter
  • ¼ tsp. vanilla

Preheat oven to 375 degrees Fahrenheit

In a medium bowl, mix dry ingredients: flour, sugar, baking powder, baking soda, and salt

In a separate large bowl, combine butter, vanilla, and eggs

Slowly add dry ingredients until stiff batter forms

Fold in apples

Fill muffin cups 3/4 full

To prepare topping, mix brown sugar, flour, and cinnamon

Mix in to butter to form crumbs

Sprinkle over muffins

Bake for 15 to 20 minutes

Cool for a few minutes before removing from pan


Combine glaze ingredients and drizzle over muffins
