  • 1/2 tsp. lemon juice
  • 1/4 tsp. ground cinnamon
  • 1 medium red apple, peeled, cored, and chopped
  • 1 carnival squash, halved and seeds removed
  • 1/4 C. walnuts, chopped
  • 1 bag American blend salad

Preheat oven to 375 degrees Fahrenheit. Combine butter, syrup, lemon juice, cinnamon, and apple in a bowl. Place mixture into the hollow of each squash half. Set in a baking dish and roast for about 45 minutes or until squash is soft. Allow it to slightly cool. Fill the middle with salad blend, sprinkle with chopped walnuts, and serve,
