  • 3 apples, finely diced
  • 1/2 tsp lemon juice
  • 1/4 cup sugar
  • 1/4 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • 1 lb softened butter
  • 1 C cream cheese, softened
  • 4 egg yolks
  • 4 C flour

Toss diced apples with lemon juice in large bowl. Combine sugar, cinnamon and nutmeg with apples and toss together. Let stand for 15 minutes.

Mix butter with egg yolks in large bowl until fluffy. Add cream cheese and beat in until blended. Add flour in four intervals, stirring in each time. Divide dough into 12 balls the size of an orange. Wrap each in plastic and refrigerate for an hour.

Take out two or three dough balls at a time and warm them up until they're soft enough to roll. On lightly floured surface, roll out dough to a 12-inch circle and cut into 8 slices.

Place about a teaspoon of sliced apples on the edge of each slices. Roll slices around apples and towards the center, then tuck the end underneath the dough to create a croissant shape. While rolling the slices up, preheat the oven to 350°.

Place crescent rolls on parchment lined cookie sheet, and bake in oven for 30 minutes or until golden brown. Remove pan. After a minute, transfer to racks, let cool and serve.
