  • 6 C. beef stocks
  • 6 large yellow onions, julienned
  • 3 Tbs. flour
  • 3 Tbs. butter
  • 3 tsp. Garlic, minced
  • ½ C. dry white wine
  • 1 tsp. Worcestershire sauce
  • 1 bay leaf
  • 1 tsp. Dried thyme
  • 1 C. (plus more if desired) of Gruyere or mozzarella cheese, shredded
  • 1 baguette
  • Salt and pepper

In a large pot, saute the onion on medium heat with the butter until they are caramelized. It should take about 30-40 minutes, stirring frequently. Add the garlic and then the flour. Stir the mixture, add in the white wine and scrape the pan. Pour in the beef stock, then the Worcestershire sauce, bay leaf, and thyme. Preheat the oven to 400 degrees. Slice the baguette and brown the bread. Let the soup simmer while this being done. Switch the oven to broil. Spoon the soup into a bowl and place the baguette on top. Sprinkle it with cheese and broil on high for 2-4 minutes until the cheese is bubbly.
