  • 2 boneless chicken breasts
  • 2 C. chicken broth
  • 1 T. cornstarch
  • 1 T. olive oil
  • 4 cloves garlic, minced
  • 1 tsp. parsley
  • ¼ tsp. red pepper flakes
  • 1 tsp. onion powder
  • Salt and pepper to taste

In a large skillet, sauté garlic in oil until fragrant. Add chicken and cook for about 20 minutes until juices run clear. Remove chicken from skillet and cover to keep warm. Pour chicken broth and cornstarch into the skillet and whisk to combine. Simmer until broth begins to thicken. Stir in parsley, red pepper flakes, onion powder, salt, and pepper. Return chicken back into the skillet to coat evenly with sauce. Serve on a bed of vegetables and drizzle extra garlicky broth on top.
