Applesauce Bran Cereal Muffins

This recipe replaces butter with applesauce so the muffins stay moist, but they're much lower in fat.

  • 1 1/4 C. flour
  • 1 Tbs. baking powder
  • 1/4 tsp. salt
  • 2 C. Post Raisin Bran Cereal
  • 1 C. fat free milk
  • 1 egg, lightly beaten
  • 1/2 C. applesauce
  • 1/3 C. firmly packed brown sugar
  • 2 Tbs. margarine, melted

Preheat oven to 400 degrees. Mix flour, baking powder and salt in large bowl. Mix cereal and milk in medium bowl; let stand 3 minutes. Stir in egg, applesauce, sugar and margarine. Add to flour mixture; stir just until moistened. (Batter will be lumpy.) Spoon batter into muffin pan sprayed with cooking spray, filling each cup. 2/3 full. Bake 20 minutes or until golden brown. Serve warm.

Yield: 12 muffin

How To Make Jumbo Muffins: Spoon batter into 6 6 oz. ovenproof glass custard cups sprayed with cooking spray. Sprinkle additional cereal over batter before baking, if desired. Bake 25-30 minutes or until golden brown.
