Ingredients
- 2 1/2 C. all-purpose flour
- 1 1/2 C. unsweetened applesauce
- 1 1/4 C. sugar
- 1/2 C. butter or margarine, softened
- 1/2 C. water
- 1 1/2 tsp. pumpkin pie spice
- 1 1/2 tsp. baking soda
- 1 tsp. salt
- 3/4 tsp. baking powder
- 2 lg. eggs
- 2/3 C. chopped nuts
- 1 C. raisins
- cream cheese frosting, if desired
Directions
Heat oven to 350 degrees. Grease bottom and sides of one 13 X9-inch pan with shortening; lightly flour.
In large bowl, beat all ingredients except nuts, raisins and frosting with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on high speed 3 minutes, scraping bowl occasionally. Stir in nuts and raisins. Pour batter into pan.
Bake 45 to 50 minutes or until toothpick inserted in center comes out clean. Cool on wire rack. Cool for about 1 hour.
Frost with cream cheese frosting if desired.
