Ingredients

  • 1 C. sugar
  • 1 stick butter, softened
  • 1 egg
  • 1 tsp. vanilla extract
  • 2 C. whole wheat flour
  • 1 tsp. salt
  • 1/2 tsp. baking soda
  • 3 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1 C. unsweetened applesauce
  • Frosting:
  • 1 stick butter, softened
  • 8 oz. cream cheese, softened
  • 3 C. powdered sugar
  • 1 tsp. cinnamon

  1. Preheat oven to 350 degrees and grease a loaf pan.

  2. Cream the butter and sugar together. Add the vanilla and the egg and beat until well combined.

  3. Whisk together the flour, baking soda, baking powder, cinnamon, nutmeg and salt.

  4. Add dry ingredients and applesauce to the wet ingredients and beat until combined.

  5. Spread batter in the loaf pan and bake for about 1 hour unitl golden brown.

  6. For the icing: beat together the butter and cream cheese until combined, then add the powdered sugar and cinnamon. Continue beating for 6-8 minutes. Spread on cooled cake.
