  • 1/2 cup shortening
  • 1 1/2 cup oats
  • 1/2 cup sugar
  • 1 egg, beaten
  • 1 1/2 cup all purpose flour
  • 1/2 tsp. salt
  • 1 tsp. baking powder
  • 1/2 tsp. vanilla extract
  • 2 Tbsp. milk
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. ground allspice
  • 3/4 cup apricot jam

Cream sugar and shortening. Add the vanilla, milk, and egg; beat well. Combine the flour, baking powder, cinnamon, salt, allspice, and oats. Mix well. Add the creamed mixture to the dry mixture, mixing well. Spread half of the batter into a 9 inch square pan that is greased. Spread the apricot jam over the bottom layer and then top it with the remaining batter. Bake the bars at 400 degrees Fahrenheit for 25 minutes. Cut it into small bars.
